Pumpkin and spinach gnocchi

I had some mashed potato in the fridge so the gnocchi only took a few minutes to make (here's a quick and easy recipe if you're interested).

I made the sauce by frying some chopped pumpkin and onion for about 10 minutes until they were beginning to brown, the adding some salt and chopped garlic, then covering everything with a layer of chopped spinach and covering the pan for about 5 minutes. No herbs or spices - didn't need any.

I served up the dish by putting all the gnocchi in one bowl, sprinkling on a little grated parmesan, then covering it with the sauce and decorating with a little more cheese. I made a tomato and onion salad with basil to go with it and Sveta was really impressed.

I made a lot of gnocchi and decided to freeze half of it. It froze well - I left it on a plate with plenty of flour to stop the bits sticking together, then when it was frozen, I dusted it off and put it in a bag. Now I need to see how it will cook from frozen, but I reckon it will be fine.
